Coconut Cream Pie
Recipe:
To make a delicious coconut cream pie, you will need the following ingredients:
- 1 pre-baked 9-inch pie crust
- 1 cup sweetened shredded coconut
- 2 1/2 cups whole milk
- 1/2 cup sugar
- 1/3 cup cornstarch
- 1/4 teaspoon salt
- 4 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 tablespoons powdered sugar
Here are the steps to prepare the coconut cream pie:
1. In a medium saucepan, combine the shredded coconut and whole milk. Heat over medium heat until the mixture is simmering. Remove from heat and let it sit for 30 minutes to infuse the coconut flavor.
2. In a separate bowl, whisk together the sugar, cornstarch, and salt. Add the egg yolks and whisk until smooth.
3. Reheat the coconut milk mixture until simmering. Slowly pour about 1/2 cup of the hot coconut milk into the egg mixture, whisking constantly. Gradually whisk the egg mixture back into the saucepan with the remaining coconut milk.
4. Cook the mixture over medium heat, whisking constantly, until it thickens and comes to a boil. Boil for 1 minute, then remove from heat. Stir in the butter and vanilla extract until smooth.
5. Pour the coconut cream filling into the pre-baked pie crust. Press plastic wrap directly onto the surface of the filling to prevent a skin from forming. Chill the pie in the refrigerator for at least 4 hours or overnight.
6. Before serving, whip the heavy cream and powdered sugar together until stiff peaks form. Spread the whipped cream over the chilled pie. Optionally, sprinkle some toasted coconut on top for garnish.
